Thai Style Laska with Roast Chicken

Want to make something warm for winter but don’t want to put in too much efforts ? 🙂

I made my own version of Chicken Laska today, it was really simple, quick and tasty. See below for my easy recipe:


  • 2 tbs of Olive oil
  • 250ml coconut milk
  • 500ml chicken stock
  • 200 ml of water
  • 1 tbs fish sauce
  • 1 roast chicken
  • 200g vermicelli noodles Laksa Paste
  • 3 tomatoes
  • 1 bag of beansprout
  • 1/2 red onion
  • 1 jar of laska paste


  • Step 1
    Heat oil in a pot over medium-high heat. Add Olive oil and onion. Stir until the onion is brown and add the laska paste from the jar. Meanwhile, pick the roast chicken into serving pieces and add into the pot. Stir for about 3 minutes, add the chicken stock and water. Bring to boil and add the coconut milk in. Add the fish sauce and bring to boil. Simmer for about 10 minutes. Add the tomatoes (cut into serving pieces) and leave on stove for 3 minutes before turning the stove off.
  • Step 3
    Cook the noodles according to packet instructions. These noodles only takes about 5 minutes not like pasta so don’t leave too long on stove, it will be soggy. Drain noodles
You can use any vermicelli noodles, this is just an example of what they look like.

Serving instruction

In a bowl, add some beansprout, add the drained vermicelli and then laska soup over the noodle. If you like spicy then add some fresh chili and dried onion over the top.
